Well two new countries to check off last night. Brazil and Georgia. The wine from Brazil would appeal more to the everyday drinker while the Georgia wine was Brett city but I can handle that. Here are the wines and the amazing ribs my friend Tom cooked up.
CellarTracker! Tom & Bruna’s Ribs & Wines

- 2021 Elephant Seven Syrah Les Collines – USA, Washington, Columbia Valley, Walla Walla Valley (7/21/2025)
Day 1: Sad Elephant Seven closed doors. This is excellent featuring black pepper, blackberries, black licorice, floral and spice. Medium plus finish. 92+
Day 2: Blue currants, spice, black pepper, rose petals, dust, tar and exotic spices. Medium plus finish and even better with a day. 93 points
Day 3: Holding form with black pepper, minerals, blue currants, tar, spice, floral and dust. Medium plus finish. A great value. 93 points
Recommendation: Look via auctions. (93 pts.)

- 2008 Grand Rêve Vintners Collaboration Series III Ciel du Cheval Vineyard – USA, Washington, Columbia Valley, Red Mountain (7/23/2025)
Well this is showing amazing and much better than 2019. Still young for an 08 so think through 2030. Black pepper, tar, spice, cherry, plum, dust and violets. Still some heat that blew off. Decanted 2 hours and maybe could have used more. Great auction purchase. (94 pts.) - Label change to Force Majeure.

- 2020 Pheasant’s Tears Poliphonia – Georgia, Kakheti (7/23/2025)
Well an acquired taste and you better like the “funk” to even attempt this wine. Barnyard, spice, sour cherry and dust. Unique would be an understatement here. Medium finish. (92 pts.)

- 2022 Cristofoli Tannat Coleção – Brazil, Rio Grande do Sul, Serra Gaúcha (7/23/2025)
Well not surprised anyone on tracker has ever had this wine and let me tell you an outstanding wine from Tom and Bruna. Thought this was a rocks Syrah! Funk, red currants, stone, gravel, floral and spices. Medium plus finish and nice acidity. A truly excellent experience and my first note from Brazil. (94 pts.)

Great notes as always John!
